A savory dish featuring leeks, potatoes, and bacon. Good for using up leek greens from other recipes instead of throwing them away.

  • from 4 to 6 leeks add
  • 2 cloves add

  • 1 cup add
  • 2 lbs add

Step 1

6 oz diced bacon


Cook diced bacon in a cast iron skillet on medium high heat until fat renders and it's somewhat crispy.

Step 2

as needed butter or olive oil


If needed, add butter or olive oil to the skillet to ensure there's enough fat to coat the leeks.

Step 3

from 4 to 6 leeks dark green parts of leeks, sliced

2 cloves minced garlic

a bit salt


Add sliced dark green parts of leeks, minced garlic, and a bit of salt to the skillet.

Step 4


Saute the leeks and garlic with the rendered fat for about 5 minutes, or until leeks start to soften.

Step 5

1 cup water


Add a cup of water to the skillet and bring to a simmer.

Step 6


Lower heat to medium low, cover, and cook until greens are soft, about 30 minutes.

If needed, turn heat up, uncover, stir, and let excess water evaporate.

2 lbs cooked potatoes


Add cooked potatoes to the skillet, breaking them apart with your hands.

some butter


Add salt, plenty of white pepper, and some butter. Mash everything together.

Pat the mixture into a flat layer and press down with a spatula. Leave for a couple of minutes to let the bottom get crispy.

Step 11


Mash it all together and mix it up. Try to mix the outside into the inside. Pat into a flat layer again, and leave a couple of minutes to let the bottom get crispy. Repeat a few times.

Serve the hash topped with fried eggs.
