A quick and flavorful stir-fry dish featuring shrimp, Chinese chives, and eggs.

  • 1/2 pound cover with cold water and stir in baking soda
  • 1 teaspoon stir in with shrimp
  • 1 teaspoon add to shrimp
  • 1/4 teaspoon add to shrimp
  • 1/4 teaspoon add to shrimp
  • 4 large whisk together
  • 1 tablespoon whisk together with eggs
  • 1/4 teaspoon whisk together with eggs
  • 1/4 teaspoon whisk together with eggs
  • 1 tablespoon heat in wok
  • 2 ounces add to wok
  • 2 medium cloves add to wok
  • 1 teaspoon add to wok
  • 1 tablespoon heat in wok

Step 1

1/2 pound medium shrimp, shelled and deveined

1 teaspoon baking soda


In a medium bowl, cover shrimp with cold water and stir in baking soda. Refrigerate for 30 minutes.

Step 2


Drain and rinse shrimp under cold running water; pat dry with paper towels.

Step 3

1 teaspoon vegetable or peanut oil

1/4 teaspoon salt

1/4 teaspoon ground white pepper


Transfer shrimp to a small bowl and add 1 teaspoon oil, 1/4 teaspoon salt, and 1/4 teaspoon white pepper. Mix well.

Step 4

4 large eggs

1 tablespoon milk

1/4 teaspoon ground white pepper

1/4 teaspoon salt


In a medium bowl, whisk together eggs with milk, 1/4 teaspoon white pepper, and 1/4 teaspoon salt.

Step 5

1 tablespoon vegetable or peanut oil


Heat 1 tablespoon oil in a wok over high heat until lightly smoking. Add shrimp and stir-fry for 1 minute.

Step 6

2 ounces chives or scallions, cut into 1-inch lengths

2 medium cloves garlic, minced

1 teaspoon minced fresh ginger


Add chives, garlic, and ginger. Stir-fry until chives begin to wilt and shrimp are just cooked, about 1 minute longer. Transfer to a plate.

Step 7

1 tablespoon vegetable or peanut oil


Heat the remaining 1 tablespoon oil in the wok over high heat until lightly smoking. Add whisked eggs, lower heat to medium, and cook without stirring until the bottom layer of egg has set, about 30 seconds. Using a spatula, scrape eggs from sides in towards middle of wok. Continue to cook, scraping eggs from sides in towards the middle, until some large fluffy curds have formed and eggs are about halfway cooked.

Add shrimp and chive mix to eggs and gently stir until eggs are just slightly runny. Transfer to serving plate and serve immediately.
