A delicious and spicy pasta dish with a rich red pepper and sausage sauce, perfect for a cozy night in. And it's vegan!

  • One package pasta
  • 1/4 cup pasta water
  • salt
  • 1 Whole onions
  • 2 small or 1 very large red peppers
  • 1 PAckage (4 links)
  • 3 PHAT cloves garlic
  • 1/4-1/2 tsp red pepper flakes
  • 1/4 cup tomato paste
  • 1/2 cup white wine
  • 14 oz crushed tomatoes
  • 1/2 cup or more vegan parm

Step 1

One package of your favorite pasta

1/4 cup reserved pasta water

Salt


Start boiling water for your pasta. Salt the water generously. Cook pasta according to package instructions and reserve around 1/4 cup of pasta water.

Step 2

1 Whole yellow onion, minced into 1/8in pieces

2 small or 1 very large red peppers, minced into 1/8in pieces


Sauté onions and peppers with olive oil in a large pot over medium-high heat until onions are translucent and peppers have a little char. Season with salt and pepper.

Step 3

1 PAckage (4 links) Beyond Hot ITalian Sausage


Add beyond sausage to the pot and break it up. Let it cook down and develop some crust in the pan, you feel me?

Step 4

3 PHAT cloves of garlic, pressed through garlic pressed or minced

1/4-1/2 tsp red pepper flakes


Add garlic and red pepper flakes to the pot. Cook until fragrant, then add salt, pepper, and any additional herbs or spices.

Step 5

1/4 cup tomato paste


Stir in tomato paste and let it brown against the pan for a moment.

Step 6

1/2 cup white wine


Deglaze the pan with white wine, stirring vigorously. Lower the heat once the alcohol has cooked off.

Step 7

14 oz crushed tomatoes


Add crushed tomatoes to the pot and stir. Season with salt and pepper.

Step 8

1/2 cup or more vegan parm


Stir in vegan parm/cheese and allow it to melt. Let the sauce simmer on low heat for 10-15 minutes.

Step 9


Drain the pasta and place it in a large bowl. Add the sauce and toss, adding reserved pasta water splash by splash until the sauce reaches the desired consistency. Optionally, add 1-2 TBSP of vegan butter (I recommend Miyoko's oat) for richer sauce.

Serve the pasta and finish with more Parm, salt, pepper, or meatballs if desired.
